Hungover?

Don’t worry, I have the cure.

As long as you have some left over BBQ just hanging around in your fridge, actually this recipe is a good one to plan to be hungover for. Get some chaps around and make a pact to be a bit hanging in the morning.

I love this breakfast, it’s so simple and uses up a lot of your leftover BBQ. I believe there is medical proof that smoked meat and eggs will cure most aliments*.

I used leftover beef short ribs, but have used pulled pork or pork belly. I think you could probably put anything in this recipe, except chicken. I think that would be weird, but everyone is different and that’s what makes the world go around. So don’t be shy, throw in what you have.

Serves 2 mortally hungover people.

1 Leftover Beef Short Rib

4 Eggs

8 Mushrooms

1 Chilli

Handful of Chopped Coriander

Chop up the left over meat product (in this case beef short ribs).

Then cook down the chilli and mushrooms in a saucepan. If your pan is really hot and you are really hungover then the fumes from the chilli at this point will probably make you want to die.

Don’t do it, don’t give up.

Add your chopped meat-based product and warm through for a minute or so.

Mix up your eggs in a bowl with some salt and pepper.

Mix the eggs in to the same hot pan as the meat, mushrooms and chilli, scrambling up the eggs.

Mix in 2/3 of your chopped coriander and stir through.

Serve in bowls with a sprinkling of the coriander you have leftover.

I actually made up this dish (well, it wasn’t that hard…) while I was very hungover and even took the photos while hungover. Well done me.
